Single Sign On is a system that allows you use a single user account across multiple sites.
It's used by companies for security and convenience by companies who have multiple applications for their employees to use.
For example, logging into your email system and having access to the project management system because both sites can verify your authentication through the SSO system.
Logging into sites with Facebook or Google is using SSO. When you register for a site, those services authenticate your credentials and pass account info like name and email requested by the site to set up your profile.
